The climate of the south of Italy is exceptional for good quality development. In these conditions more than 10 hectares and hundreds of olive tree whose age are sometimes 150 years, allow for production of an excellent olive oil.
The harvesting is between November and March. However, before we need to be well-organized. Indeed, it is necessary that our properly cleaned and ready for the event. In order to achieve this goal, it is necessary to plough the fields. On the other side, big nets surround the trees need to be put on the ground. Then the process of maturing begins. During this phase, we use special materials, vibrator combs which allows to collect our olives Geracese. The still green olives undergo a cold extraction in order to get virgin olive oil with a low degree of acidity (0.7%).
On the other end, each year our lands our, mill and our structure are checked by biological organism. Our olive trees undergo no chemical treatment that allow to benefit good product from our agricultural biological farming which respects the environment.
